Banana Caramel Puddings

Serves: 4

Ingredients
90g butter, melted
1/2 cup (60g) almond meal
3 egg whites
3/4 cup (120g) icing sugar
1/4 cup (35g) plain flour
25g butter, melted, extra
2 tablespoons firmly packed brown sugar
2 medium bananas (400g) sliced thickly

Method
Preheat oven to 200C / 180C fan forced. Grease four 9.5 cm-round 2/3 cup (160ml) ovenproof dishes; place on oven tray.

Combine butter, almond meal, egg whites, icing sugar and flour in medium bowl; stir until just combined.

Divide extra butter among dishes; sprinkle evenly with brown sugar.

Divide banana slices then pudding mixture equally among dishes.

Bake uncovered, about 20 minutes or until puddings are browned lightly. Stand puddings 2 minutes before turning onto serving plates.
